Vineyard Information and Tasting note:		We planted our Viognier vineyard in 2005, and have had to wait patiently for the first crop. Knowing the variety's propensity for getting over-ripe very quickly, we elected to harvest the grapes early in the season to preserve the liveliness of the flavours.

Yield:		3.55 tons/hectare
Fermentation:		The grapes had 5hr skin contact in the press before pressing. After pressing and 24hr of settling the juice was racked of its lees and inoculated with a yeast from the Cotes du Rhone. After fermintation started 50% was moved to second fill French oak and the rest fermented in tanks. After fermintation the wine was left for a further 2 months on fine lees before being blended together.
