A south-facing slope on Burgherspost (our neighbouring farm) is the source of the grapes for this wine. Not only do the vines get less harsh afternoon sun, but the afternoon's southerly breezes blow straight at them, with the result that natural acidity is preserved.
Thanks to this zestiness, Summertime Sauvignon Blanc delivers maximum refreshment (not to mention all-round food-friendliness). We expect it to evolve well in bottle (assuming anyone has the willpower to leave any bottles to age for more than a few days!).
Cloof's hot summer days turn to cool evenings as the southerly winds bring chilling air off the nearby Atlantic Ocean. It is exactly this daily interplay between ample sunshine and slightly chilly nights that gives this wine its combination of intense fruityflavours and refreshing acidity.

Fermentation: The grapes underwent a 4hr skin contact period in static de-juicers before pressing. After a 18hr settling period at 12ºC before being racked of the lees, fermentation was started with French yeast at between 13 and 15ºC which lasted for 3 weeks before the wine was dry. After a further 4 months on the fine fermentation lees, the wine was racked and filtered. 5% of the wine was fermented in new French Oak barrels.
