This wine was made by Frederick “Bolle” Kalumpie and his team of cellar assistants. Bolle was raised on Cloof, and his family has lived here since 1945, with their employment prospects limited to farm labour.The agricultural focus has shifted over the years to become wine-focused, ownership has changed several times, and the Kalumpie family is — finally — in a management

Yield:		Cabernet 5.5 Shiraz 8.0 and Merlot2.5 tons/hectare
Fermentation:		Cabernet Sauvignon direct inoculation with yeast and warm fermentation at 30 degrees C for 8 days and macerated for a further 8 days before being pressed. The Shiraz had 2 days of cold soak before inoculation with yeast and fermented for 5 days at 32 degrees C and macerated for a further 10 days before being pressed. The Merlot had 4 days of cold soak before inoculation and fermented for a further 10 days before pressing.
Maturation:		After malolactic fermentation in tanks all 3 components were blended and transfered to barrels for 15 months of maturation. 25% new French oak.
