Fermentation            No skin contact, direct pressing and overnight settling. After racking the clean juice of its lees the juice was inoculated with yeast and fermented for 16 days at 16ºC.

After the wine finished fermentation it was racked of its fermentation lees and spend another two months on fine lees (sur lie) before being filtered and bottled.
