40 Days Natural Sweet Chenin 2009

Ancient chenin blanc vines are a national treasure. Decades after youthful vigour has faded to gnarled wisdom, they now concetrate their energy on producing only a small crop of exquisitely flavoured berries. Add 40 days of extra hang time and those flavours become even more intense.

Fermentation:		Overnight maceration in press to facilitate juice and flavour extraction. After pressing the juice settled for 18 hours before racking and filteration. The juice was then transfered to barrels 20% French oak and inoculated with yeast. After 3 weeks of fermentation the yeast died naturally and a perfect balance was obtained. Only 4250 of this wine was made.
